Just got out of Locavore NXT in Ubud, and my head is still buzzing a bit... This meal didn't even start at the dining table. First, a dedicated guide led us through their own spice garden, pushed open a mysterious Balinese wooden door, and then we went down a staircase… I swear, when I saw that futuristic mushroom cultivation cellar[1], I thought I had stumbled onto the set of a sci-fi movie. BUT! To be honest, the flavors were really polarizing.
Many dishes relied too heavily on stacking fermentation and umami flavors, with a style that was extremely bold, even a bit bizarre[6].
