The broth had that rich, mellow texture from being simmered for a long time, and the chicken was stewed super tender, falling off the bone with just a gentle poke of a spoon. On the table, there were also the soul-stirring trio: sweet soy sauce, Sambal chili sauce, and the most important Koya powder (powdered shrimp crackers). DIY according to your own taste, add it in like crazy, this is the essence of eating Soto! Mantap!

The taste is indeed top-notch, it's not called a decades-old establishment for nothing[4]. Many Surabaya locals have been eating it since childhood. But! To be honest, the Koya powder available on the table might not have been fresh enough due to the hot weather; I felt it had a slightly rancid smell[5]. It's best to smell it before adding it.
Also, at lunchtime, it gets incredibly crowded. Finding a seat is like scrambling for train tickets, waiting is the norm.[6]
