I first picked up a piece of the pork skin, put it in my mouth, and with a "crunch," the aroma of the fat instantly exploded! Then I took a bite of the pork belly—crispy on the outside and tender on the inside, not greasy at all. The biggest surprise was that they actually used Andaliman pepper, unique to Sumatra, to infuse a Lokal soul into this famous Balinese dish. This fusion flavor is incredible! Mantap! 👍
